I fell pretty hard for scotch eggs whilst living it up in London. They sound gross and I don’t really know why I loved them so much – but there it was on my plate every Saturday Morning – a Scotch egg and a tattie scone. There is really no reason why Scotch eggs need to be so unhealthy and now that Dr. Oz has lauded the vitamins in an egg yolk this will make an excellent sub for my usual egg white omelet. Fitocracy brought us this recipe which is pretty close to a Scotch egg. I may sub it a bit, some veggie sausage perhaps?
